Handstand got together with Nicole’s Kitchen LA and got her to share her Cinco De Mayo Asian Mushroom Taco in Lettuce Cup Recipe! The Cinco De Mayo Asian Mushroom Taco in Lettuce Cups Recipe

Serving Size 6

Ingredients for the Mushroom Taco:

  • 3 packs of white mushrooms, pre-sliced
  • 4 cloves of garlic, grated
  • 1/4 cup ponzu sauce
  • 1 tbsp siracha
  • 3 tbsp sesasme oil
  • 2 tbsp soy sauce
  • 2tbsp lime juice
  • 1/4 cup sesame seeds

Nicole’s Kitchen: Asian Mushroom Taco in Lettuce Cups

Ingredients for Asian Cabbage Slaw in the Mushroom Taco:

  • 1 head of red cabbage sliced thin
  • 1 bag shredded carrots
  • 1 cup chopped cilantro
  • 3 scallions, chopped
  • 1 cup snow peas sliced in halves diagonally
  • 1/2 cup seasoned rice vinegar
  • Juice of half of lime
  • 3 tbsp sesame oil
  • 12 butter lettuce cups

Directions for the Mushroom in the Mushroom Taco:

  1. Firstly, in a skillet over medium heat, add in your sesame oil
  2. Then add sliced mushrooms and grated garlic. Refrain from mixing mushrooms with spatula
  3. Third, allow the mushrooms to brown in saucepan for 5 minutes
  4. Then you’ll add ponzu sauce, Siracha sauce, lime juice in addition to your soy sauce
  5. Then mix mushrooms to cook for 3 more minutes
  6. Finally, finish it off with sesame seeds

Directions for Cole Slaw in the Mushroom Taco:

  1. First, take a bowl, place sliced cabbage, cilantro, carrots, scallions, sesame oil, seasoned rice vinegar, lime juice, and soy sauce in there together
  2. Then, use a salad tongue to mix concoction well
  3. Consequently, you will need to allow your cabbage slaw to marinate in the dressing for 10 minutes before serving

Directions for Serving:

  1. Take a butter lettuce cup, pour in 2 tbsp of mushroom mixture and 1 tbsp of cabbage mixture.
  2. Allow each person to assemble Asian tacos for themselves, make it fun!
  3. ENJOY!
