Frugal, Fast, and Fit: Eggs 5 Ways for 5 Days

Eggs are a super affordable way to add protein to your diet. You can buy a dozen for a measly $3– or less! But as with any meal prep, eating the same thing every day can get old fast, so here are 5 ways to prep those eggs for 5 different days!

1. Hard Boiled Eggs – Try them in the oven!

A hard boiled egg is a classic preparation probably every has had. There are different methods and opinions on the best way to make them: whether that’s traditionally or this oven-baked method.

Serving suggestion: Chopped up with avocado, ham, sea salt, and black pepper  

2. Poached Eggs – The 3 Minute Miracle

A poached egg looks more intimidating than it actually is, and takes only minutes from carton to plate. Simply fill a shallow skillet with water, bring to a boil, add a capful of vinegar, crack your egg in, then grab a spoon and swirl the water around the egg and... voila!

Serving suggestion:  Atop an english muffin with a drizzle of olive oil, arugula, smoked salmon, salt and pepper.

3. Frog in a Hole

A childhood favorite for some and blessing to moms (and college kids) everywhere, this fun dish is great alone or as a foundation for toppings. Use the top of a glass to cut a hole in a piece of bread, throw it in a lightly greased pan and crack an egg in the the middle then flip.

Tip: Use coconut oil in the pan and try Ezekiel Bread

4. Egg Muffin Tin Frittatas

You may want to buy a whole dozen just for these since they border on gourmet and storing is a cinch in the fridge. The recipe is more involved, so browse here and pick your poison!
 

5. The 2-Ingredient Paleo Pancake

A Paleo-craze anyone can get into. Grab a ripe banana and mash it up and mix in 1-2 eggs. Heat up a pan with coconut oil and then drop in and flip when lightly browned.

Tip: Change it up by adding vanilla and/or cinnamon into the mixture and topping with Nutella or strawberry jam.
